Recipe: Zucchini Slice and Parmesan Crisp by Perfect Italiano

If there’s one ingredient I never get bored of experimenting with, it’s good ol’ glorious cheese. Cheese is pretty much top on the list of my favorite things in the world.

There’s just so many things you could do with it – grill, bake, deep fry, turn it into a sauce or simply have it on its own. The brand that’s been making a constant appearance in my fridge for what’s coming to almost 2 years now is Perfect Italiano. The signature bright green bags of cheese can be found in my kitchen at any given point in time! Perfect Italiano is a cooking cheese brand that adds simple Italian flair to everyday family meals. It is simple and easy to use, and easy to use – ensuring that homemade meals are not complex or time consuming.

My favorite consistency of cheese is the ooey gooey melted type which can be found in pizzas and baked dishes, and that’s why the next Perfect Italiano cheese recipe I’m going to bring you is yet another baked till perfectly golden brown creation!

 

Zucchini Slice

As much as I love my baked pastas, some days I feel like having something lighter, so this zucchini slice recipe is what I’d turn to when I want something lower in carbs than pasta that still has that satisfying bite and texture!

Ingredients:

  • 5 eggs
  • 120g self raising flour
  • 350g of zucchini
  • 1 large onion
  • 200g bacon or skinless chicken
  • 220g of Perfect Italiano Perfect bakes cheese
  • 1/4 cup vegetable oil

Directions:

  1. Preheat your oven to 180 degrees, and grease a 9″ inch pan, or preferably, a baking dish
  2. Break the eggs into a large mixing bowl, and gently combine egg whites & yolks together
  3. Add self raising flour and mix to a smooth consistency
  4. Grate the zucchhini, finely chop the onion, and dice the bacon. If you are using chicken, dice the chicken and cook it first.
  5. Add zucchini, onions, bacon / chicken, Perfect Italiano Perfect Bakes cheese and oil into the large mixing bowl
  6. If you are using chicken, then add half a teaspoon of salt to the mixing bowl
  7. Mix everything together until the batter is uniform
  8. Bake in the oven for about 30 minutes
  9. To achieve a golden brown crust, turn the temperature up to 220 degrees for the last 5 minutes
  10. Let cool for 8 minutes before serving so that the zucchini slice may stiffen up to reasonably stable consistency for easier handling

I love using avocado and zucchini in my cooking because of how delicious and good they are for you!

Their creamy and fleshy meat lends a very versatile use to dishes, and in this case, the zucchini makes for a very smooth and creamy quiche. If you’d like to go for a halal friendly or healthier option, feel free to use diced chicken instead of bacon. I’m a bacon-everything kinda girl, so please don’t be alarmed at how often bacon appears in the recipes I post.

My favorite part of this dish is undoubtedly the golden brown cheesy crust, made with Perfect Italiano Perfect Bakes.

I’m sure it’s common knowledge by now that cheesy crust just makes anything baked about a hundred times more delicious.
I’d serve this zucchini slice as a breakfast item (made the day before, of course) or as an afternoon snack / side dish! Even if you don’t normally fancy leafy vegetables, this zucchini slice will take you by surprise because of how creamy it tastes.

Parmesan Cheese Crisps

Ingredient:

  • Perfect Italiano Parmesan Cheese

Directions:

  1. Preheat oven to 200 degrees
  2. Lay baking paper on the baking tray
  3. Place about circular domes of Perfect Italiano Parmesan Cheese that are approximately 6cm in diameter
  4. Bake for 4-5 minutes, being careful not to let it burn as it will make the crisp taste bitter

How great are these?!

You know those cheese crisps you find in fine dining restaurants? Well who knew they were this simple to make? They can be done in a mere few minutes and in my opinion, it tastes better than any cheese snacks I’ve bought in supermarkets before.
They turn out crispy on the edges, slightly chewy in the middle and packed with a bold flavor. They work so well to jazz up your soups, salads, pastas, or just eat them the way I do – on its own! I could finish up 8 crisps in one sitting! No other ingredients or preparation steps needed.

Simply lay Perfect Bakes Parmesan cheese then bake until golden brown, and enjoy. If you normally find parmesan cheese a little too strong for your liking, don’t worry, the taste and aroma is tamed the moment it’s baked. Just pure crispy cheesy goodness here! Even if you don’t cook, this is doable by anyone.

I am a big fan of spritzing the good stuff all over my face, a habit I’ve picked up thanks to living in a country as hot and humid as Singapore.

Proud to be an Olympus PEN ambassador!

I have some pretty exciting news to share with you guys: I’ve recently been made an Olympus PEN ambassador!

Alongside my blogger buddies Yina Goh and Evonnz, we will be proudly representing Olympus for the next whole year, showing you the type of pictures you can take with Olympus cameras and how we incorporate our Olympus cameras into our everyday lives and blogging duties!

2. I can edit the photos instantly! I love how it has Instagram-like features whilst producing great quality photos. I was playing around with the 14 live-preview art filters that was really fun.

3. With the Olympus PEN EPL-7’s Wi-Fi function, I can sync the camera directly to my phone via the Olympus Image Share smartphone application for instant sharing. I no longer need to transfer photos to my laptop first. Instead, I can directly edit my photos on my phone and share my photos within minutes!

I brought the PEN E-PL7 with me on my recent trip to Japan, and here’s some captures of the yummy food I had during my holiday taken with the camera!

Shooting was such a breeze thanks to the quick shutter speed and smart functions.

Even in low-lighting conditions, my images remain relatively sharp and the auto focus & shutter speed of the PEN E-PL7 always astounds me! The white balance of the pictures were also effortless to achieve as the settings are easily adjustable while shooting.

It’s a lightweight camera that is great for all sorts of lifestyle purposes I may need it for – selfie-taking, scenery shots, foodie captures and the list goes on! My favorite part about this camera is how compact and functional it is without being too costly or heavy to lug around. I know a lot of girls (like myself) can’t stand lugging around a heavy or bulky camera on a daily basis, but this would fit into your everyday handbag just fine!

Perfect Italiano is giving away free cooking kits!

The time has come yet again for me to explore the world of cooking with Perfect Italiano cheese and sharing with you the results of my culinary adventures!

Perfect Italiano is a cooking cheese brand that adds simple Italian flair to everyday family meals. It is simple and easy to use, preventing homemade meals from being difficult, complex and time-consuming. You can easily add an Italian flair to your meals with a sprinkle of their great tasting cheese. Using Perfect Italiano’s cheese as the main ingredient, I’ve whipped up and shared the recipes for: Mac & Cheese and Deli Sandwich, Alfredo Pasta Bake and Parmesan Apple Crumble, & Tortilla Pizza and French Onion Soup.

That’s a total of 6 different dishes that feature various usage of their range of cheeses, and today, let’s add 2 more to the list! Today’s recipes were specifically thought up to be very inexpensive, quick, and delicious to make. Anyone, even without prior cooking experience, can attempt these! Both recipes should take under 10 minutes for prep AND cooking time. Not forgetting they are vegetarian-friendly as well!

Cheesy Eggy Mee Goreng

Ingredients (serves 1):

  • A packet of your favorite instant Mee Goreng
  • 2 eggs
  • 1 tablespoon of milk
  • Japanese seasoning (consisting of seaweed & sesame mainly)
  • 1 tablespoon tomato ketchup
  • 2 handfuls of Perfect Italiano Perfect Bakes cheese

Directions:

  1. Prepare your Mee Goreng according to the packet instructions. I like to have my noodles very firm with lots of bite. Soggy noodles are just meh. Plate your noodles.
  2. Whip up 2 eggs in a bowl with a tablespoon of milk, then stir in 2 moderate handfuls of Perfect Italiano Perfect Bakes cheese.
  3. Pour into frying pan and cook the scrambled eggs over medium heat with some butter or oil, removing them from the heat while they’re still quite runny. Gently place on top of noodles.
  4. Garnish with Japanese seasoning and a good squeeze of ketchup all over your noodles.

I don’t usually eat instant noodles. I find the taste boring and not worthy of my calories. I’d rather eat bread with spread. But this, I would gladly wolf down again and again! The cheesy runny egg addition absolutely turns your average boring instant Mee Goreng into something much more special.

A plate of instant Mee Goreng with a fried egg on top just isn’t quite the same thing. Isn’t it awesome how some unexciting food we’re totally familiar with can be completely re-invented with just some cheeses?

It kinda reminds me of okonomiyaki, which is Japanese egg-wrapped fried noodles! You can do so much more to this, or leave it as it is. Make it even sexier by adding some meat (hot dogs perhaps, to keep to the “instant” theme?), but I chose to keep it simple and do-able under 5 minutes, because this is my idea of a yummy quick-fix.

The tart and sweet ketchup is necessary to balance out the flavors. Despite not being a baked dish, I chose Perfect Bakes for this as it contains a mix of three different cheeses for a more well-rounded taste!

 

Cheesy Chocolate Banana Fritters

Ingredients:

  • Bananas (as few or as many as you’d like)
  • Corn starch
  • Panko breadcrumbs
  • Egg
  • Some milk
  • Maple syrup
  • Shaved chocolate
  • Perfect Italiano Mozzarella Cheese
  • Oil for deep frying

Directions:

  1. Peel and cut bananas into shorter lengths if using the longer variety.
  2. Dip bananas in milk, then coat with corn starch.
  3. Crack and mix an egg in a bowl. Dip corn starch coated bananas into egg wash.
  4. Coat the bananas in panko breadcrumbs.
  5. Deep fry the bananas in hot oil until golden brown which takes about 15 seconds.
  6. Sprinkle on shaved chocolate and Perfect Italiano Mozzarella Cheese, and finish off with a generous drizzle of maple syrup!

These are inspired from a local treat called Goreng Pisangs! But instead of being simply fried in a thick batter as most stalls would sell them, I chose to give it a crispy but thin coating instead, letting the natural flavors of the juicy and sweet banana come through more. The shredded Mozzarella Cheese and shaved dark chocolate pieces complement the banana fritter perfectly and it does NOT taste the same without the cheese. I’ve tried and tested this theory.

The cheese adds a certain savory taste that enhances the flavor and because mozzarella is so mild, it’s not strange at all! Finally, we drizzle maple syrup all over this creation because… maple syrup over anything is a fantastic idea. ;)

I hope you give these unorthodox fusion recipes a try!

They’re extremely simple and there’s very little to wash up afterwards because there are only a few steps to take. I wanted to show you guys that cheese doesn’t have to be used for only Western dishes, but that it can be easily incorporated into Asian food. We’re lucky to live in Singapore where good food is easily available and we can enjoy all sorts of cuisines from around the world, so we should make full use of this global exposure to our advantage!

I was an MDIS Media and Communications student

Throwback to when my good friend, Yina Goh and I went to MDIS School of Media and Communications to collaborate on a music video together. It was so nostalgic for me to go back to campus, because I did my diploma there about 5 years ago, and it was years since the last time I’d been there! Memories started flooding me the moment I walked through the gates.

I thought of the times I had in school, the unforgettable experiences and all the friends I’d made. I believe some of the most defining moments in your life are made in school. It’s when you learn the most, about yourself and the world around you.

I had the best time recording popular songs with other like-minded students from the school, they’re incredibly talented and driven! We recorded it on the roof garden of the school, which was recently revamped and now looks amazing. In fact, the campus has undergone quite a major face lift since my time here. I have to say I’m a little bit jealous, because it’s so much better now! The layout of the campus and the facilities provided have improved tremendously.

After I finished my ‘O’ level, I was faced with one of the toughest decisions in my life. What course should I study? Turns out that media / mass communications is a very highly sought-after course.

I started considering pursuing other course options instead, but no matter which way I looked at it, I couldn’t imagine myself doing anything else. I love the media and its impact on people. It’s literally what I live and breathe. I like learning about how media affects people’s lives. Sounds, images and text from the media shape the way we think and live our day-to-day lives. Why wouldn’t I want to learn how to be a part of it? I want to know what makes the world tick. I want to learn how to manipulate the possible advantages, and what people ache to know everyday. Media is information.

“The MDIS School of Media and Communications is one of the pioneers in the mass communications programme field in Singapore. It is also the first institution in Singapore to offer mass communications programmes from an American university- Oklahoma City University (OCU). The OCU mass communications degree programme is taught by OCU faculty in Singapore. The programme has a rich history and offers many unique advantages to their students. MDIS is one of the few PEI (Private Education Institution) to have its own TV and Radio Studio. Students are able to learn essential skills such as handling radio and television equipment, content producing, directing, scripting and video editing.Students are groomed to be radio DJs and they will run their radio show in the campus every Monday, Wednesday and Friday during lunch time. Students will also make full use of the TV studio to produce videos and doing editing of the videos.

I still remember the first time I had my first “radio interview”. We had to read from a script and pretend to be a radio DJ reporting some news, and later on, asking some questions. I was so nervous, but it ended up being tons of fun! It was practical lessons like that I enjoyed the most. I felt more prepared for the real world. Although, at that point in time, I had no idea what I wanted to work as, I knew it would be something media-related. I had contemplated being a journalist or writer of some sort. Who knew I’d become a baker / blogger? Despite not working in the official industry (e.g a print publication) my blogging work is still extremely closely related to what I studied in school, and I watched the theories I had heard all about in the classroom come to life before my eyes when dealing with blogging campaigns and clients. Most of the lecturers we had for the course were personable and friendly, which made my time in school a whole lot more enjoyable. My classmates were a varied bunch, with lots of different personalities and it was an eye opening experience getting to see so many different characters in class. It was completely different from secondary school, where the environment was a lot more contrived, so people couldn’t be themselves as much. At MDIS, there is a lot of freedom, and therefore, room to grow.

Your choice of tertiary education is crucial, and I’ve had my fair share of friends who ended up studying in a course they had absolutely no interest in. I think that is a waste of time, studying something you don’t even enjoy. My personal advice would be to ALWAYS ALWAYS ALWAYS choose what you believe in. MDIS is a popular choice for both local and international students.

I’ve never regretted my choice to study in MDIS, because I feel like it gave me the push I needed to kick start my working life, and some preparation for what I was about to face in the big world out there.
