Sunshine, lollipops and rainbows..

Spent the whole of yesterday filming and editing a video… So proud of myself for it!!! I think it’s awesome!!!!!! :*

Woke up in a great mood today and decided to bake these cute little cupcakes I love cupcakes, they bring me infinite joy!

All is right with the world at the moment.

New Camera, Rainbow Cookies and Gingerbread Sluts!

I got myself a new camera!!!!!!!!!!

It’s a Canon EOS 550D.

It’s an entry-level SLR (meaning it’s a noob’s pro camera) and even though I already have 3 cameras at home, I really wanted an upgrade because I’d love to take photography to a newer level!

I have an underwater one for underwater usage, obviously. It takes pretty nice pictures out of water too, but I want something that will do justice to my holiday pictures because I’m planning to go to Maldives soon!!! ROAR!!!

And I have an everyday casual camera that is really light and compact and runs on AA batteries. And the last one I stuck bling all over it but didn’t like it in the end because it feels weird so I never touched it anymore afterwards.

Expensive mistake.

Note to self – don’t try arts and craft on costly gadgets!

For those who are wondering, I got it for about $1600, including GST and a camera bag plus 8gb memory card and the standard kit lens and 2 extra lenses that I bought… I bought a wide angle and HD lens, and a macro lens which was absolutely amazing!

I LOVE MACRO PHOTOGRAPHY!!

But it’s so bloody difficult and I don’t even know how to change the lenses LOLOL I have so much to learn. But I’m willing.

Haven’t had the time to properly play with my camera yet, so I don’t really have fab pictures to show you guys how the quality is. I suppose you can judge for yourself, since all the pics taken in the post were with my 550d.

Btw, don’t bother asking me where I got my cam from. The people who sold me this cam were dishonest and I will definitely not be reeling in customers for businesses that don’t deserve it.

Note - My house has super poor lighting so that may be why the photos aren’t very sharp or grainy! Either that or I’m just a really shit photographer lol.

Any fellow canon or 550d users got photography tips to share with me?!? :)

Ok, enough yabber, time to bring on the pictures!!

I was too lazy to leave my house for test shots, so I went around my house snapping random pics, desperately trying to take “artistic” pictures to justify spending 1.6k on a camera I don’t even know how to use -_- (yet)

This was in portrait mode wtf only realized after I snapped.. I so want to try out my macro lens soon!!!

My gorgeous red nails!!!! Sponsored by Milly’s ♥

Have been doing my nails there the past 2 years. Click on link above to make an appointment with her!

I am absolutely in LOVE with red recently.
Been buying red clothes, red accessories, and even putting on red lippie all the time even though I used to think red looks awful on me!!!

Well, that was before I figured out how to make it work for me. Now I absolutely love it. It’s so sensual and attention demanding!

More gorgeous red stuff around my house. Yeah, we have a lot of fake flowers.

Aww look, it’s the old cuckoo clock that we used to have back in the very first house I grew up in!!!

I remember always watching the bird pop out of it’s little “house” and watching the dancers spin around, when I was younger.. Kinda sad that it doesn’t work anymore.

So anyway, Peggy came over yesterday to bake gingerbread cookies with me!

BAHAHA I am so lazy that even when I meet friends they come to my house rofl I really have to step out of my house more often besides just to eat

Gingerbread mix!!!

I’ve never tried baking gingerbread before, so I thought it was a good idea, even though it’s not exactly near Christmas lol.

Ok so this is pre-made as well, brand is “Greens” from NTUC, costs about 5 dollars and includes a good amount of mix and chocolate chips and icing tip for you to decorate with and even gingerbread cookie cutters!

How awesome?

I know I use pre made mixes often, but we also baked chocolate cookies as a last minute decision and I came up with my very own recipe on the spot!!!

And it tasted heaps better than the gingerbread lol it’s very yummy, if I do say so myself!!!
Everyone we fed the cookies to agreed so nyahahaha

People seem to think that pre-made cake mixes are very easy and require much less effort. You are wrong!!!

With pre made mixes, you still need to add in eggs and milk or vanilla essence wtf, and then knead the dough with your hands! It’s exactly the same as creating the entire recipe from scratch, (what’s so hard about adding flour yourself? nothing right?) except with pre made mixes you don’t have to buy all the ingredients individually, which helps save weight and cost load!

It’s ideal for people like me who don’t bake all that often, but often enough to want to try all sorts of different pastries and cookies / cakes.

So to whoever who left a comment saying that using a pre-made cake mix isn’t home made, go screw yourself.

All cut and ready to pop into the oven!!!

Cookie-cutting is probably my favourite part of the whole process lol, besides licking the batter off my mixing spoon of course ;)

In it goes!

Grow my little gingerbread friends, GROW!!

They bake really fast, like about 15 minutes per batch? That’s the beauty of cookies.. It’s really hard to burn them and you don’t have to check back on the texture quite so often as you do with cakes!

With some patience, time and a little creativity you will get…

Adorable gingerbread men!!!!

Peggy’s first decorated gingerbread man! Reminds us of the gingerbread man from Shrek :P

…OMG!

Hahahaha Peggy, how could you?!

This girl ah… the moment she makes something, she will eat it straight away after. Before I even started decorating my cookies, she ate hers already lol wtf

.
.
.
.
.
.
.

It’s my turn to decorate….

I aptly named this one, The Kung Fu Master.

The most pissed off looking cookie I’ve ever seen LOL and he’s wearing a rainbow jumpsuit!!! ♥

This one’s called The Hollow Man. LOL cuz it’s damn ugly!!!

HAHAHAHAHAHAHAH say hi to Gingerbread Slut!!!

Mad cute or what? Peggy’s ingenious idea!

Gingerbread Slut and her husband Green Underwear Boy with their little star and flower children lololol

Ok, now I’m gonna teach you guys how to make

chocolate rainbow cookies!

I won’t be teaching how to make the gingerbread cookies cuz it’s very duh and you can find all the instructions on the cake mix box.

This is a recipe that I came up with on the spot and it’s suited according to specific tastes (mainly my mum and my bro cuz they are so picky!!!)

You can add or reduce the ingredients according to your own preference!

To make this chocolate cookie mix, you will need approximately:

1) 4 cups of flour

2) 3-4 cups of sugar, depending on how sweet you want it to be

3) 1 teaspoon of vanilla essence

4) 3 tablespoons of cocoa powder (if sweetened, reduce sugar content)

5) a pinch of salt

6) 3 tablespoons of butter / margarine

7) 3-5 tablespoons of milk (depending on how mushy or crunchy you want your cookies to be!)

8) 1-2 eggs (again, depending on how fluffy or hard you want em to be)

Using a large mixing bowl, pour in the flour, sugar and butter. Then include the eggs, butter, milk in respective order and the rest you can anyhow throw in also nevermind.

You will find that this cookie mixture is relatively dry, because I want my cookies to be quite thin and crispy like how my mum likes it, so don’t worry if it doesn’t look like normal cake batter! (The texture is similar to gingerbread)

Add just the right amount of milk so that it’s moist enough to take a doughy texture.

(looks like a pile of shit here rofl)

Then, once you’ve mixed it all properly, pick up the dough with your hands and start kneading it with your hand!

For those of you who have never done kneading before, it’s pretty much just like playing with play-doh.

You pick up the dough and start squishing it around in all sorts of directions with your hands, and you will find that the texture of the dry dough becomes much more flexible and play-doh ish so once you’ve got a nice even and smooth texture without any extra little crumbs falling out, you know it’s ready.

For the heart shaped cookies like mine, get your cookie cutters ready then lay your cookie dough on a flat surface and start peeling off chunks of it to roll into flat pieces with a rolling pin.

For rainbow shapes, simply take a perfectly round bowl of a decent size and use it as your cookie cutter.

Then cut the circular piece of dough directly into half, and ta-dah!! You’ve got your perfect rainbow shape ^__^

Once the shape is done, pop it into the oven and bake for about 10-15 mins depending on how thick each cookie is and how soft or hard you want it.

….While the cookies are baking, it’s time to get down to the icing!!!

The problem with rainbow cookies and cakes is that the longest time is spent decorating them… and I mean really REALLY long.

Just like in my previous “How to bake a rainbow cake” post, separate your home made icing using this recipe into 6 equal bowls and mix in the colours of the rainbow with food colouring!

Wait for your cookies to cool down a bit, then start painting the colours of the rainbow onto your cookies with a piping bag or icing decorator.

You’ll need to be reallyyy careful, get somebody with steady hands (like Peggy!) to do it. Any mistake and you’ll have to wipe everything off and start over.

Start with red, which is the outermost layer, and continue doing each stripe onto individual rainbow shaped cookies and slowly work your way down to complete all 6 coloured layers!

Once you’re done, you should have something like this, hehe!!!!

Absolutely adorable or what? ♥ them to bits!

Of course, if you’re patient enough, you can do different coloured hearts like what I did to boost cuteness factor ^___^

Really proud of this batch of cookies, since they’re an original idea and everything was made up as we went along!!

As compared to my rainbow cake, this takes less time and effort.. but both are sure to make whoever sets their eyes on them squeal in delight and begging you for just one bite.

I love rainbows, and I love baking. What do we get in the end??

Too-cute-to-eat rainbow cookies for major nomming!!!!!! :3

Rainbow Frenzy!!!

So recently, I’ve been obsessed with the idea of baking pretty, pretty cakes.

I don’t know where my new craze and interest sparked from, but it’s really fun and everybody loves a good, yummy cake so heck, I proclaim baking to be my new-found official hobby!

My first task?

BAKE A SUCCESSFUL GOD DAMN CAKE TO START OFF WITH.

See, the previous cakes I’ve baked so far have been quite FAIL, if I do say so myself… They either look weird, or taste weird.

So my first “proper” cake had better be something unique and really awesome – I decided on baking a RAINBOW cake. (I obviously adore bright colours)

Not just ANY rainbow cake… I was determined to make a rainbow cake that will make people go “ZOMG” and hopefully persuade them that I am a bloody awesome baker even though I actually almost have no idea what I’m doing.

And because I’ve been getting so many requests doubled with the fact that I am an angel,

Today I WILL SHARE WITH YOU HOW I DID MY RAINBOW CAKE!!!!

Mission Cake Rainbow : WIN!!!

To bake a rainbow cake like mine, you will need..

A helpful boyfriend to start off with. LOL. It’s quite a lot of trouble for one person to handle, especially if you don’t have all the appropriate tools!

If you don’t have a trusty bf, get your maid / friend or prepare to spend a couple of hours on this.

.
.
.
.
.
.
.

As for the ingredients, you will need:

Your own recipe for the cake mix.

Take any off google or buy a baking cook book. I used a pre-made cake mix from the supermarket, because I find that using pre-made cake mixes as a base always turns out the best for me.

Somehow, their cake mix ensures that the cake has the perfect light and fluffy texture that I want. Plus it’s so convenient, I just add milk and eggs and mix away!

Mine is a regular vanilla-based sponge cake.

Make sure the cake mix is not dark or heavily coloured because it will affect the colours of the rainbow!

Usually I just add flavouring and extra bits that I want to the pre-made cake mix to give it a little bit of my own touch, such as adding Vanilla Extract or Chocolate Chip bits.

After mixing your eggs + flour + butter + sugar + whatever else in… It’s time to paint the colours of the rainbow!

You’ll need a variety of vibrant, tasteless high quality food colouring.

Don’t be cheap – a little goes a long way when it comes to food colouring. Make sure its tasteless or your cake will end up tasting funny, and buy high quality colouring coz you don’t want shitty colours!

I got my utensils and ingredients from Redman, it’s a baking shop where you can find almost everything you will need to bake this cake in their shop!

Get fondant, colouring, utensils, decorating tips, flour sugar etc all from there :)

Separate your batter mixture into 6 equal bowls, then add the food colouring into each individual bowl as seen above!

You want to be very careful with food colouring. The one that I’m using is extremely concentrated, and won’t come off clothes if I stain myself, so sometimes just a few drops is sufficient. (I used the ends of chopsticks to dip into the food colouring)

You don’t want to underdo it cuz the colours look the best when most vibrant, yet at the same time you don’t want to overdo it cuz it might taste off and look too saturated.

Add a few drops of colouring each time, and mix well, then observe the colour.

Most of the time, the batter mixture appears quite light but when well-baked, it turns to a much darker colour… You can compare my coloured batter to the actual cake later on.

.
.
.
.
.
.

Once you’ve completed all 6 colourful bowls of the rainbow, it’s time to start baking!!!!

** The trick here is to bake your different coloured layers ONE by ONE.

Start off with the bottom most layer, which is purple, then slowly work your way up to the other layers. If you have multiple pans, good for you.. saves time and effort.

Spread the batter evenly into your baking pan (didn’t take pics of these coz was too pre-occupied) and set oven heat to about 180 degrees and bake for 25 minutes for each layer!

If you DON’T bake the layers separately, instead of a nice and even rainbow, you will get…

This.

A mushy, tie-dye effect kind of rainbow cake.

We thought that carefully placing each layer of coloured batter on top of each other in the pan would keep the colours and shape together, but how wrong we were…

My family doesn’t think it looks all that great but it’s all about personal preference cuz me and Sam thinks it’s just fine like this.

Of course it’s not as nice as the properly-layered rainbow, but it’s pretty damn unique like this already and it looks really fun all the same!

It is also a lot less time consuming and more convenient.

You’d take about 45 minutes to bake this tie-dye rainbow cake, but with the other one you’d need a grand total of 150 minutes for the 6 different layers to bake individually!

However, if time and effort is not an issue and if you’re really out to wow people and impress,

I suggest you read on and follow the rest of my instructions for a WIN rainbow cake :)

While your 6 layers of cake bake individually for 150 minutes, you have plenty of time… so start thinking of how you’d like to decorate the top of the cake!

We used white fondant (it’s like edible play-doh) to create different cake-topper decorations,

and I simply L♥VE fondant!!!

You can do so many things with it…

Roll it out to cover your entire cake for a smooth, professional finish, or come up with your own lovely little creations if you are artistic enough like my boyfriend!

Check out the rose that Sam handmade with white fondant!!!!

Is he bloody talented or what?!? Mad skills. I kept them instead of eating it hehehe

.
.
.
.
.
.
.
.

So once all 6 layers of the cake have been baked, make sure you pile them on the right way!

Purple first, then blue, then green, then yellow, then orange and red.

Wait for your cake to cool down for about an hour, then start decorating! I suggest covering the top with white, because that will add a nice touch of contrast and give your rainbow that extra burst of colour.

We covered the entire thing with white fondant and made the pink icing ourselves, using this recipe and pink food colouring. Tastes GREAT!

Sam also created these two little doves, because… I don’t even know. LOL.

What have doves got to do with rainbows?!?!

Nevertheless, they are supa dupa cute!!!! This is your cake, do whatever you want with it. If you’re baking it for someone else, use coloured icing to write a short personalized message!

It’s perfect for birthdays and festive events because it’s just so happy-looking and original.

Alternatively, if you can’t be bothered doing such detailed decoration (it really is hard work) then just drench your entire cake with a generous amount of white icing then top it off with rainbow sprinkles!!!

That was what I did for the tie-dye rainbow cake.

And that’s it, you’re done!!!!

.
.
.
.
.
.
.
.
.
.

Put your cake into the fridge for a bit before serving, because cakes are always nicer when slightly chilled.

At first sight, the cake may look like nothing particularly spectacular (especially if you have a neutral and plain topping like all white) but once you slice it open…..

VOILA!!!!!!!!!!!!!!!

(shitty photo cuz this one was taken at night)

They will find that they have underestimated you and your seemingly boring cake, because people do NOT expect rainbow cakes!!! MUAHAHAHAH!

At least, that was the satisfaction I got when my family went “OOOoooOOohhh” when I showed them my cake!

….Okie, I hope I have successfully passed on my profound wisdom and knowledge to you so off you go, go make somebody’s day by baking them the most awesomest cake they have ever seen!

In my opinion, home made cakes baked with love are far better than buying some shitty Swensens ice cream cake or your average fruit cake or chocolate cake.

Come on, you have more sincerity and creativity than that, don’t you?!?

It’s never been all about the taste or professionalism, it’s always about how happy the cake makes that person!

And my rainbow cake makes ME very very happy!!

I don’t even know why.. I just can’t help but grin every time I look at it. I look at it more than I eat it.

Fluffy colourful goodness!

I love it when the house smells like batter, it gives off such a homely vibe….

I can’t wait for my next friend’s birthday, because I have tons of ideas I’d love to explore, and I’m gonna start baking a lot more!!!

I may not be fantastic at it, but it makes me happy and it’s so fun… and it makes the people who get to eat it happy, too!

My family actually gathered at 1:30am to eat my rainbow cake cuz that’s the time I finished baking it HAHAHAH wtf!

Rainbow crumbs!!! ^______^

One last picture and tip for you guys!

I didn’t put any layers of cream in between the cake because I didn’t want to break up the colour.

Since rainbow is the theme we’re going for, it would be silly to ruin it by having random layers of cream so either colour your cream accordingly with the rainbow, or make sure the top and side has lots of buttery sinful cream so that your cake will not be too dry!

And there you have it, now you know how to make a rainbow cake too!!!

It’s so easy and definitely a crowd pleaser – I can’t believe how many people approved of this cake when the previous ones I’ve baked were all so….. let’s just say, they weren’t too excited about it.

HAVE FUN!!!!!!!

Oh I can’t wait for the next cake I bake!

If you’re going to bake one according to my post, leave a comment with pics or let me know how it turned out for you, okie!!!

xoxo,
Jess

My 17th birthday

Was a simple one, but I had everything I needed, wanted and more than what I asked for.

Spent the day with family and my boyfriend

Sam the medical scientist, darling bf who is a 7 hour flight away right now.

Prof Loh the dental surgeon / lecturer, my dad.

Jeremy the gamer brother who is bumming in the room next to mine now.

The only men in my life.

I keep very few girl friends, let alone male friends… so you’re looking at the only males I give a shit about in this world.

Besides Zac Efron.

Me and the boys went for an indian buffet lunch @ Masala Art @ Peninsula Hotel which was reasonably priced at about $20 per head. Food quality and variety not bad, definitely value for money… Good choice dad, I’ll be back there soon!!!

I used to make a big deal out of birthdays until I realized that you don’t need to spend a whole lot of money to invite a whole bunch of people to a fancy party.

Quiet, simple celebrations work just fine for me as long as they’re with my fav people…

Ever since then, decided not to have a birthday party until my 21st, which is a shocking 4 years away!!

God I love being this young, despite the reactions I always get. I feel like I’m at an advantage of being given a head start, because I’m only 17 and yet I’m living the life of possibly a 21 year old already. I feel fortunate to have experienced as much as I did.

Anyway, Sam flew to SG to celebrate my birthday with me, yay!!!

Haven’t had a birthday cake in awhile, so we baked one~

In the oven looking quite fail lol!!!

The top part was weird looking and the inside wasn’t baked properly, only realized after 40 minutes that the problem was because the oven was set on pre heat and not on baking mode -____-

Top part was partially cooked but the center wasn’t, so we sliced it off with a butcher knife and shoved it in the oven again hahaha.

The adventures of fail cake makers!

I know it looks dubious, but the batter actually tasted GOOD!

Especially when it’s fresh from the oven and still warm and fluffy and melts in your mouth, mmmm.. Vanilla spongy cake ftw!

It looks orange cuz I added red food colouring, intended for it to be pink but turned out this weird color anyway :P

Cut the cake in half to slap some cream on!!

Painfully whipped by my boyfriend who spent about half hour whipping the liquid cream in a bowl (twice) and cursing under his breath, wondering why my house doesn’t have a blender.

The icing we made!

OMG THIS IS SO YUMMY!!!
No doubt diabetic sweet but soooooo good. The texture and taste is to die for. I’ve never made icing by myself before and it’s just so much better than icing you get outside!

Completely covered it with yummy icing, a bit excessive and I know it looks uneven and all but man you should have seen what it looked like without the lifesaver that was icing lolol

I picked the decorations for my cake, and Sam designed it!

Rainbow sprinkes. Goooood stuff.

Rainbow daisies!!!! How brilliant eh?

Cleaning the cake up nicely as you can tell :P

Such a happy and cheery looking birthday cake! Any happier, you’d have to draw :) on it

Carefully drawing my name on with edible glittery red gel!!! Awwww

Despite trembling hands, I still think he did a good job :P

Most guys have terrible handwriting and can’t draw for nuts, but he actually has artistic talent!! You’ll see later.

So proud of him. I’m glad everyone who’s met him, likes him too! Intelligent, independent, capable, funny, understanding, patient, creative, determined, opinionated, free-spirited, loving, I could go on forever listing all the great things about him…

He drew Jessica and I drew Sam. I suck at cursive writing

The final product!!!

I reckon it looks pretty damn good (for our standards anyway hahaha) but yeah the icing needs a little smoothening to be done :P

After all this was done, I accidentally poured some rainbow sprinkles all over the top of the cake and the expression on his face was priceless!!!!

He spent the next 20 minutes picking the sprinkles out of the icing and red words with a tweezer LOL.

Everything feels like a dream, except this is a dream come true.

A long distance relationship is hard

…but loving you is easy.

The jewelry’s absolutely lovely.

I love it.

The portrait of us is sooo precious.

I love it.

But nothing was better than having you in Singapore with me on my birthday…

So thank you for making my 17th birthday so memorable :)

And thank you so, so sosososo much for everything else.
